Development and Evaluation of Millet-Infused Banana Flour Breakfast Flakes: Formulation and Analytical Examination

ABSTRACT Breakfast cereals, processed from various cereal grains, are a staple breakfast and snack food known for their convenience and nutritional potential. Traditionally consumed with dairy products such as cow's milk, these cereals can also be paired with yogurt, plant-based milks, or enjoyed plain. Since their inception in the late 19th century, breakfast cereals have evolved from simple corn flakes to a diverse array of grains, shapes, and flavors, often fortified with vitamins and minerals underscores the health benefits of consuming breakfast cereals. Eating breakfast, compared to skipping it, enhances macro- and micronutrient intake, reduces the risk of weight gain, and improves cognitive performance. Moreover, high-protein breakfast meals have been found to better maintain blood sugar levels. The inclusion of diverse ingredients such as finger millet (Ragi) and green banana flour in breakfast cereals further enriches their nutritional profile.
