Development and Physio-chemical Analysis of Nutri-Spread Using Artocarpus heterophyllus (Jackfruit) and Coccus nucifera (Coconut)

ABSTRACT The study of Nutri-Spread development was carried out at department of food technology, Parul Institute of Applied Sciences, Parul University, Vadodara. The main objective of this study was to utilize` the seeds of Artocarpus heterophyllus [Jack fruit] as it is underutilizedand to develop a Nutri-spread which provides sufficient nutrients such as protein, resistant starch, thiamine, riboflavin, and antioxidants. Artocarpus heterophyllus belongs to the family of the fig, mulberry, and breadfruit trees, also referred to as Jack tree [Moraceae]. Chocolate flavoured Nutri-Spread was prepared using Jack-fruit seed powder, coconut oil, cocoa powder, jaggery powder, whey protein concentrates. Two formulations of Nutri Spread were prepared. The Physicochemical parameters, microbiological makeup, and sensory characteristics were assessed. The designed Nutri-spread was found to have the following compositions: 11.6% moisture, 10.6 g/100gprotein, 61.3 g/100g carbohydrate, 22.4g/100g,fat, 2.1% ash, and delivers up to 457.2 K/Cal of energy. The findings demonstrate that Nutri-spread is well regarded and excellent in terms of nutrition due to its nutritional content.
