Standardisation and Evaluation of Millets Based Nutri Milk Mix

ABSTRACT Now a day’s people have become more health,strength and fitness conscious in search of higher energy giving and micronutrient rich foods for better health. Consumers are adding health drinks in their diet to improve their daily nutrient intake. This research study was undertaken to develop a value added ready to use beverage mix, to incorporate millets(nutri dense with health benefits) in people’s regular diets . The present study aimed at sensory evaluation, proximate analysis and shelf life study of the standardised, best rated Nutri milk beverage mix. The developed product variations were subjected to sensory evaluation (9 point hedonic rating scale) by 15 semi trained panelists. Sensory qualities included appearance, colour, texture, taste, odour and overall acceptability. Development and standardization trials in the laboratory, indicated that incorporation of 40%Urad dal, 10%Ragi, 10%Jowar, 10%Bajra, 5%Watermelon seeds, 5% Muskmelon seeds, 5%Almond, 5% Pistachio, 5% Walnut and 5%Sugar was most accepted and rated best by sensory panelists. Results showed that at 5% level of significance, there is a significant difference with respect to appearance (p-0.007), colour (p0.058), texture (p-0.713), taste (p-0.178), odour (p-0.555) and overall acceptability (p-0.080). The nutritive value of the developed value added nutri milk mix, per 100g , contains 389 kcal energy, 17 g protein, 13 g fat, 0.77g fiber, 63g carbohydrate, 3 % ash and 4% moisture with a shelf life of 3 months. This nutri milk mix can be used to make an ideal nutridense, health promoting beverage for children, adolescents, adults , elderly , pregnant women, lactating mothers.
